Ingredients:
1 tsp oil
½ onion, finely chopped
1 green chili, finely chopped
1 tomato, finely chopped
¼ capsicum, finely chopped
½ carrot, grated
2 tbsp sweet corn
¼ tsp turmeric pdr
½ tsp Kashmiri red chili powder
1 tsp chaat masala
¼ tsp crushed pepper
¼ tsp salt
2 tbsp tomato ketchup
2 tbsp finely chopped coriander leaves
6 slices bread
6 tsp butter
½ cup cheddar cheese, grated
3 tsp green chutney
Method:
Make the green chutney by blending chilies, mint and coriander leaves, salt, and cumin.
Heat oil in a pan and sauté the onion and green chili for a minute. Add chopped tomatoes and cook for another minute.
Add capsicum, sweet corn, and grated carrot, cover and cook for 5 minutes.
Add turmeric, red chili powder, chaat masala, crushed pepper, and salt. Mix well, then stir in the tomato ketchup and chopped coriander.
Butter both sides of the bread slices and toast until golden.
Flip the bread, spread 1 teaspoon of green chutney on the toasted side, then add 1 tablespoon of the prepared masala on top. Grate cheddar cheese on the masala.
Cover the toast and cook for 2 minutes or until the cheese melts.
Cut the toast into halves and serve.
