Banana Pancakes with Caramelised Apples

 Made with atta and ripe bananas, these pancakes are healthier than you’d think and taste like pure comfort. Add caramelised apples on top, and you’ve got yourself a five-star dish that still feels like home.

  

Ingredients:

5 medium ripe bananas 

1.5 cups whole wheat flour/ atta 

2 tbsp sugar 

¼ tsp salt 

¼ cup corn flour 

1 tsp baking powder 

¼ cup milk 

2 medium apples 

2 tbsp brown sugar 

2 tsp butter 

1 tsp lemon juice

Method:

For the Caramelized Apples:

Heat a pan over medium flame and add the chopped apples, ¼ teaspoon salt, brown sugar, and butter.

Allow the butter and sugar to melt, then add lemon juice and cook on low heat. Stir occasionally until the apples become soft and the sugar caramelizes.

Once done, turn off the gas and keep the caramelized apples aside.

For the Pancakes:

Mash the bananas with a fork in a large bowl.

Add the flour/ atta, corn flour, baking powder, sugar, and ¼ teaspoon salt. Mix well.

Add the milk and stir the batter until it reaches a smooth consistency.

Heat a pan over medium flame and grease with butter.

Pour a ladle of the batter into the pan. Cover with a lid and cook for 2 minutes, then flip and cook until both sides are golden brown.

Serve the pancakes hot with the caramelized apples on top.
