 Carrot Lemonade

While lemonade is ideal for summer, we feel that you can enjoy this one all year round. It provides the obvious vitamin C benefit of the citrus but with a slightly less tangy flavor thanks to the carrot. You can also swap the sugar for maple syrup or honey for a better nutritional profile. 

Ingredients for drink:  ( for 6)
Carrots - 2 medium (grated finely) 
Lemon - 5 (juiced) 
Orange - 1 (juiced) 
Brown sugar - 1/2 cup 
Sparkling water - as needed


Method of preparing the drink:  
Blend all ingredients apart from the sparkling water. Let sit in the fridge for at least 1 hour, stirring occasionally. 
Pour halfway into glasses, top with sparkling water and add some ice if you'd like. 
 
Tip: Pour this into popsicle molds for a frozen treat- you can also skip the straining to enjoy the pulp!
If grated finely, you need not blend it, just mix all the ingredients well, stirring occasionally, mixing it well in the fridge, then adding sparkling water to serve it.
