THIRST QUENCHING LASSI/ BUTTERMILK OR ISLAND THIRST QUENCHER

INGREDIENTS

curd  1 1/2 cups
cucumber grated  1/4 cup + more
mint/ pudina  1 tbsp
coriander leaves  1 tbsp
green chillies  1 optional
roasted jeera/ cumin pdr.  1/2 tsp
water 1/2 cup or as needed
milk  1/4 cup
cream  1/4 cup
salt to taste

METHOD

in a mixie jar, add cucumber, mint, coriander leaves, green chillies, blend well, add milk, cream, blend well, add curd, blend, then add water as needed with salt blend again
pour into tall glasses, sprinkle some roasted cumin pdr., some mint leaf and serve chilled
to serve you can keep some grated cucumber in the middle of the glass to resemble an island and serve with cumin pdr. and mint leaf.
this is a very refreshing drink in summer, very cooling, as it has cucumber and mint.
you can drink it thin lassi or thick lassi, those who are health conscious, can omit cream, skimmed milk and curd made from skimmed milk.
