SPINACH WITH POTATO FLOWER SABZI


INGREDIENTS

spinach  1 big bowl
small potatoes  8-10 cut into flowers ( for this cut into small v shapes all around, you get 2 small flowers )
oil  2 tbsp
ginger-garlic paste  2-3 tsp
onion 1 big chopped fine
tomatoes  2 chopped fine
salt and chilli pdr. to taste
oil for frying
pepper pdr. little
cumin  1 tsp
turmeric pdr.  1/2 tsp
garam masala pdr.  1/2 tsp
grated cheese  2-3 tbsp

METHOD
in a pan, heat oil, add cumin, once it browns, add ginger-garlic paste, fry, add onion, fry till light brown, add tomatoes, fry till well cooked, add turmeric pdr.,chilli pdr. & add chopped spinach, mix well, cover & cook till done
in the mean time, heat oil in a kadai, deep fry the cut potatoes in flower shape till brown, drain well, sprinkle salt & pepper on them
once spinach is done, add garam masala, mix well, add cheese, mix well
serve with potato flowers neatly arranged in the dish

ps- if you can't cut into flower shapes, just cut into thin strips, like for french fries, serve with spinach, those who are calorie conscious, may simply fry potatoes with onion cut into small pieces, then fry tomatoes, then add spinach and proceed in the same way.
