INGREDIENTS
cooked rice 1 bowl
ghee/ oil 2 tbsp
cumin 1 tsp
cashew nuts chopped 1 tbsp
green chilli-ginger-garlic paste 2 tsp
pan chopped finely 2 tsp
curry leaves finely chopped 1 tsp
coriander leaves finely chopped 2 tbsp
salt to taste
METHOD
in a pan, heat oil/ ghee or mixture of both, add cumin, once it crackles, add cashews fry till light brown, add the paste, curry leaves, pan, fry well, add half of the coriander leaves, fry well, add salt, keep on sim, mix rice, cover it, let it cook for 2-3 minutes, till the masalas are well absorbed
serve by garnishing with remaining coriander leaves and chutney/ curd and papad
