Ingredients
Sweet potatoes boiled and mashed 2 cups
melted butter/coconut oil ½ cup
Eggs 2
vanilla 1 tsp
ginger pdr 1 1 /2 tsp
cinnamon pdr 1 tsp
nutmeg pdr ½ tsp
cloves pdr ½ tsp
Coconut/ brown sugar ½ cup
baking soda ½ tsp
baking pdr 1.2 tsp
salt ½ tsp
Honey ¼ cup
topping options- nuts chopped, candied ginger pieces,
Preparations.
Pre-heat oven 400 F/ 200C, prick sweet potato with fork, roast for45-60 minutes.
Let cool, scoop out flesh and mash until smooth.
In a large bowl, whisk eggs, sugar, honey, melted oil/ butter, and vanilla.
Stir in mashed sweet potato until well combined.
Sift the spices, baking pdr, baking soda and salt.
Gently fold until just combined,stir in optional dry ingredients- nuts.
Bake cake @175 C/ 350 F in a greased pan for 35-45 . minutes or until a toothpick inserted comes out clean. Cool for 15 min. then transfer to a wire rack garnish as you prefer, serve warm/ use flax eggs.
NOTE- the time can greatly vary in each oven, depending on the size, voltage and so on. In my small OTG, cakes used to bake anywhere between 15-20 minutes, depending on the amount and type of cake.
