Lemon Coconut Energy Balls

 Lemon coconut energy balls 

Ingredients

1/2 cups desiccated  coconut

1 lemon zest and juiced (about 3 Tbsp. juice)

1/4 cup almond flour

3 Tbsp. maple syrup

1 tsp. vanilla

1/8 tsp salt

 

Preparation

Place ingredients in a small food processor and blend for around five to eight minutes. While blending, scrape the sides of the food processor often. You may want to blend for a little longer than you think is necessary: Part of the mix will turn into coconut butter, which helps bind the energy balls. Stop when the mixture looks reduced and a dough forms when you press it between your fingers.

Scoop out about two tablespoons of the mixture. Shape into balls by pressing and squeezing—don’t roll. Store energy balls in an airtight container in the fridge for up to a week (if they last that long!).
