Palada Payasam also known as Palada Pradhaman is a creamy decadent payasam made using ada (rice flakes), milk and sugar as main ingredients. It is another must payasam for Onam Sadya / lunch.
Ada (Rice flakes) - You can use homemade rice flakes
or store bought ada. It comes in 2 varieties big and small. You can use
it according to your preference.
Milk - Use full cream milk for best results as milk is one of the main ingredient.
Ingredients (serves 3-4):
1 liter full-fat milk
2 tbsp ghee
cashew nuts as desired chopped
1/4 cup ready-to-use rice ada
1/4 cup + 2 tablespoons of sugar or to taste
1/2 tsp cardamom powder
Method:
Chop the cashew nuts roughly. Keep ready.
Heat the ghee in a large heavy-bottomed pan. Turn the flame down to medium and the chopped cashew nuts. Fry them till golden-brown, taking care not to burn them. Transfer the fried cashew nuts to a plate and keep aside.
Now, still keeping the flame at medium, add the rice ada to the pan. Fry them in the residual ghee till they slightly puff up. Take care not to burn them.
Now, add the milk. Mix well. Increase the flame to high.
Let the milk come to a boil on high flame. This should take 6-7 minutes.
Again, reduce the flame down to medium. Add in the sugar. Mix well.
Cook on medium flame for 10-12 minutes or till the milk thickens and reduces to almost half of its original volume. Switch off gas at this stage.
Mix the cardamom powder.
Add the fried cashew nuts. Mix well. Your Palada Pradhaman is ready. You can serve it hot, warm, at room temperature or after chilling it for a couple of hours.
