Creamy Lemon Bars

 INGREDIENTS AND METHOD

Graham crackers crushed   200 gm

Sugar 3 tbsp  45 gm , mix both well

Melted butter 1/3 cup  / 75 ml mix well with ing. 1& 2

Line an 8x8” square pan with parchment paper

Spread in the pan, press well evenly.

Bake in a preheated oven @ 170 deg C/ 340 deg F for 15 minutes

Let it cool down completely

Filling

Sweetened Condensed milk 1 ½ cup/ 460 gm

Egg yolks 3

Vanilla extract ½ tsp/ 3 ml

Cornstarch 1 tbsp/ 7 gm

 Lemon zest 2 tsp grated

Mix well with a whisk

Gradually add ½ cup of fresh lemon juice 125 ml

Continue mixing until smooth

Scrap sides and bottom, pour over crust

Bake in preheated oven @ 170 deg C/340 deg F for 18 minutes

Let it cool down completely, cut and serve.
