Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds/ jeera
- 1 onion, finely chopped
- 2 green chilies, chopped
- 1-inch piece of ginger, grated
- 1 carrot, diced
- 1/2 cup green peas
- 1/2 cup diced bell peppers (optional)
- 1/2 tsp turmeric powder
- Salt to taste
- Fresh cilantro for garnish/ coriander leaves
- Lemon wedges for serving
Instructions:
Rinse the quinoa thoroughly under cold water to remove any bitter coating. Drain well and set aside.
In a saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is cooked and all the water is absorbed. Once cooked, fluff the quinoa with a fork and set aside.
Heat oil in a large skillet or pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.
Add the chopped onions, green chilies, and grated ginger to the pan. Saute until the onions are translucent and fragrant.
Stir in the diced carrots, green peas, and bell peppers (if using). Cook for a few minutes until the vegetables are slightly tender.
Add turmeric powder and salt to the pan, and mix well to coat the vegetables with the spices.
Now, add the cooked quinoa to the pan and mix everything together until well combined. Cook for an additional 2-3 minutes to allow the flavors to meld together.
Taste and adjust seasoning if needed. Remove from heat.
Garnish the quinoa upma with freshly chopped cilantro and serve hot with lemon wedges on the side.
