INGREDIENTS
for batter
maida 1 cup
cornflour 1/2 cup or more if not using egg
egg 1 ( optional)
salt little
water to make slightly thick batter
apple sliced as you need into thick pieces ( almost 1/4 an apple, removing seed and the hard part)
oil to deep fry
Sugar syrup
sugar 1/2 cup
water 1/2 cup
oil 1/2 cup
sesame seeds 2-3 tbsp
honey 1/4 cup
PREPARATIONS
for the batter mix all the ingredients till smooth, let it rest for 10-15 minutes
for the syrup
in a broad pan, heat oil, add sugar, water, mix well, let it boil and get thick.
to prevent the syrup getting caramalised on the edge of the pan, brush little water, so that it will not spoil the syrup, let it boil and simmer for 10-12 minutes, once thick, add roasted sesame seeds,mix well
while the syrup is simmering, in the hot oil, fry the apples by coating it well in the batter, drain and remove on kitchen towel, then add the fried apples pieces in the syrup, let them get well coated, at once put the coated apple slices in ice water. At once remove them, draining the water well. They'll be nice and crisp.
To serve arrange the slices on a plate, mix honey 1/4 cup with 1 tbsp of roasted sesame seeds, drizzle it all over the slices well. garnish with mint leaves.
