Traditional Malpua

 INGREDIENTS

for batter

milk  1 1/2 litres 

mawa 50 gm crumbled

sugar 2 cups

cardamom pdr 1/2 tsp 

maida 1/2 cup

oil/ ghee for shallow frying


Syrup

sugar 2 cups

water 2 cups

milk 1 tbsp to remove scum

saffron a pinch

cardamom pdr  1/2 tsp


PREPARATIONS

Heat milk in a pan, stirring from time to time, till it reduces to half, add mawa crumbles, boil for 3-4 minutes, remove and cool completely

In a pan heat 2 cups sugar with 2 cups water, when it boils add 1 tbsp of milk to remove the scum

Add a pinch of saffron .Make 1 string syrup, remove, cover and keep it aside

 

To the milk add 2 cups sugar, ½ tsp cardamom pdr and ½ cup maida, whisk well, it will be thick pouring consistency like idli batter, shallow fry malpua in ghee/ oil

Fry till brown on both sides, drain and dip in prepared syrup for 3-4 minutes. 

drain and serve garnished with nuts on top.

You can add  milk pdr, instead of khoya
