Ingredients
for covering
onion 1 big finely chopped
medium broccoli grated fine
oil 1 tbsp
green chilies to taste chopped
olives chopped 1 tbsp
ginger finely chopped 1 tbsp
garlic finely chopped 1 tbsp
garam masala pdr 1/2 tsp
some chopped nuts
salt to taste.
potato mashed 1/2 cup
maida 2-3 tbsp
breadcrumbs 2-3 tbsp
maida to make slurry and to coat to fry
grated cheese 1/2 cup
stuffing
thick curd/ sour cream
salt little
chives little
green onion little
coriander leaves chopped little
add some Parmesan cheese powder
garlic powder
little grated cheese
mix all well
Preparations
in a pan heat oil, add garlic, once it brown, add onion, ginger , green chilies and little salt to fry till onions are light brown, add grated broccoli, mashed potato, salt and other spices of your choice and add nuts, mix well.
remove cool, add maida 2-3 tbsp and breadcrumbs 2-3 tbsp, mix well, to see that you can roll the mixture, if too sticky add little more breadcrumbs.
take big lemon size ball of this mixture, make like a cup, put the stuffing, cover well, roll in maida, keep in the fridge for 30 minutes, before frying
take it out from the fridge, keep oil to fry.
dip the prepared cutlets in slurry, roll well in flour / bread crumbs
deep fry in medium hot oil till golden, drain and serve hot with ketchup or chutney
