INGREDIENTS
boiled, peeled and mashed potatoes about 2 heaped cups
bread crumbs 1/2 cup
onion one finely chopped
ginger-green chili paste 2 tsp
garlic paste 1 tsp ( optional)
coriander leaves finely chopped 3 tbsp
curry leaves finely chopped 1 tsp
salt to taste
garam masala pdr. 1 tsp
amchur pdr. 2 tsp
peanuts roasted and coarsely powdered 2-3 tbsp ( optional)
hing 1/4 tsp
crushed ajwain 1 tsp
for coating
besan 1/2 cup
hing 1/4 tsp
chili pdr. 1/2 tsp
salt to taste
water to make a thick batter
oil for frying
bread crumbs for coating
METHOD
in a bowl mix all the ingredients with potato well, make big balls
coat in besan batter, put in bread crumbs, roll well and flatten,roll in bread crumbs again to coat well, if desired, make a hole in the centre like we do in vada with your finger, deep fry in hot oil, but reduce the flame to medium, fry till brown, drain well and serve hot with ketchup or chutney of your choice.
ps- those who don't eat onion, can add finely chopped cabbage about 3 tbsp instead of 1 onion and proceed in the same way.
