INGREDIENTS FOR FRITTERS
All purpose flr/ maida 6 tbsp
Cornflour 3 tbsp
Salt to taste
Chili pdr. 1-2 tsp as per taste
Hing ¼ tsp
Chopped coriander leaves 2 tbsp or can use lemon grass
Water to make thick batter
Baby corn blanched 15-20 small ones
Oil for frying
METHOD
Mix all the dry ingredients well, add coriander leaves mix well, add water
to make a thick batter
Add 2 tbsp of hot oil to the batter mix well, then dip corn to coat well
and fry in medium hot oil till crisp.
FOR DIP
Hung yogurt/curd 1 cup
Mayonnaise ½ cup
Boiled sweet corn ½ cup
Lime juice 1-2 tsp as per taste
Salt to taste
Green chili 1-2 chopped
Blend corn with green chili well, then add test of the ingredients, blend
well and serve with fritters. This dip can be used with veges also or bread
sticks/ cream cracker biscuits/ to make burger/ roti roll.
