INGREDIENTS
rava/suji/semolina 1 cup mix with 1
tbsp oil
cooked rice 1 cup
grated carrot 1/2 cup
sweet corn blanched 1 cup and crushed coarsely
potato boiled and mashed 1/2 cup
coriander leaves chopped 1 tbsp
green chili paste/ chopped 1 tsp or as per taste
jeera pdr. 1 tsp
ginger finely chopped 1 tsp
lime juice 2 tsp
chili pdr. 1 tsp
salt to taste
water 1 cup or more
spring onion chopped with the greens 1/2 cup
Eno fruit salt 1 tsp
For tadka
oil 2 tsp +
mustard seeds 1 tsp
jeera 1 tsp
til 1 tsp
green chili chopped 1 tsp
METHOD
Mix rava with oil well, then add rest of the ingredients, i.e., all the
veges and the paste with enough water to make a thick batter
heat oil 2 tsp, add Eno on the mixture, pour the hot oil over Eno fruit
salt, mix well for 3-4 minutes.
in a heavy and big pan, heat oil,
add mustard seeds, once it crackles, add jeera , til, green chili, pour the
batter, spread evenly, cover and cook on low flame till the bottom gets brown,
carefully flip over, cover and cook for another 3-4 minutes till the other side
is also brown, if need be add little oil. serve hot by cutting into pieces.
ps- either cook it as one big one, OR in a smaller pan, do tadka in the same way using less oil and ingredients, use batter for one fat uttapam size, cover and cook in the same way, as when we do the whole batter together, it will be difficult to flip over, also it can be served to each person hot.
