INGREDIENTS
for kichadi
brown/ red rice 1/2 cup if you want it healthy or use whatever rice you've
arhar dal 1/4 cup
green moong dal 1/4 cup
cook rice and dal in pressure cooker adding 3 cups water till soft
FOR GRAVY
oil 1 tbsp
ghee 1 tbsp
peppercorn 4-5
cardamom split open 3
cloves 2
cinnamon 1" broken into 2
bay leaf 1
dry red chilies 2
jeera 1 tsp
ginger-green chili paste 1-2 tsp
onion paste 1/4 cup
tomato puree 1/2 cup
kasturi methi crushed 1/2 tsp
red chili pdr. 1-2 tsp
garam masala pdr. 1/2 tsp
salt to taste
tomato ketchup 2 tbsp
milk 1/4 cup
veges for kichadi
ghee 1 tbsp
beans, carrot and peas parboiled 1/2 cup together or use other veges like
cauliflower, peas and potato or whatever you like
water
salt to taste
METHOD
for gravy- heat oil and ghee, add the kada masalas, fry well, then add
jeera, the 2 paste, fry well till oil floats on top, then add tomato puree, fry
again till oil floats on top
mix in milk all the masala powders well, add to the gravy along with
ketchup and salt, simmer let it cook again till dry and oil floats on top, keep
it aside
in the mean time, in another pan, heat ghee, add jeera, add the veges, fry
till soft, add the cooked rice and dal mixture, add salt and pepper pdr. little
mix well, if need be add 1/4 cup water, add the gravy, mix well, let it cook on
low flame for 3-4 minutes, serve hot withsome cashew nuts fried in ghee on top.
this will make a complete, healthy meal on its own, as it has carbs,
proteins, vitamins, minerals and fat too in it.
ps- add how much ever gravy you want as per taste, the same gravy can be
used to make other dishes. You may also use other veges like broccoli, potato, cauliflower, peas or make do with what you've.
