Edamame Pasta Salad

 Edamame pasta salad in a serving dish displayed with roasted lemons 

 

Ingredients

  • 8 Ounces Rotini Pasta or other short pasta
  • 12 Ounces Frozen Shelled Edamame, cooked according to package instructions
  • 1 Small Red Onion, diced
  • 1 Medium Bell Pepper, diced
  • Cup Vegan Feta, optional
  • 2 tbsp Red Wine Vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Salt                                                                                                                           

    Instructions

    • Cook the pasta according to the package instructions. Drain and rinse with cold water.
    • When the pasta is cool, place it in a large bowl along with the remaining ingredients toss well. Serve and enjoy!
