Ingredients
For Rolls:
4 leftover
rotis, 1 cup gram flour (besan), water as needed, green chilies,
ginger, garlic, cumin seeds, turmeric, red chili powder, coriander
powder, hing, ajwain, garam masala, salt, sesame seeds, sugar, lemon
juice, coriander leaves, chopped spinach, oil for frying.
Ingredients
Tamarind Chutney:
Tamarind pulp, chopped onion, coriander leaves, green chili, black salt, sugar, water.
Grind chilies, ginger, garlic, cumin, and a pinch of salt into a coarse paste. Mix into the batter.
Add spices, sesame seeds, sugar, lemon juice, coriander, and spinach. Mix well.
Spread batter over each roti, roll tightly, and repeat with the remaining rotis.
Steam the rolls on a greased perforated plate for 12–15 minutes. Cool and slice.
Deep-fry until golden and crispy. Serve hot with sweet & tangy tamarind chutney.
