INGREDIENTS
Maida/ all purpose flour 100 gm
Baking pdr. ½ tsp
Baking soda ¼ tsp
Condensed milk 130 gm
Unsalted butter 40 gm
Ratalu / Purple yam cooked and mashed 100 gm
Milk as needed
Caster sugar 3 tbsp or more as per taste
Vanilla essence ½ tsp
METHOD
Sieve the flour with baking pdr. and baking soda well.
In another bowl, add condensed milk, butter, beat well, add ratalu, mix
well
Add dry ingredients little by little, adding milk as needed to get the
pouring consistency, add sugar and essence, pour the batter in a greased and
dusted tin, tap well to remove any air that can be trapped, sprinkle some nuts
on top, bake in a pre-heated oven at 180 deg. C for 20-25 minutes till a knife
inserted comes out clean. Let it remain in the oven for another 5 minutes, then
de-mould, cut into pieces and serve warm with some icing sugar dusted on top,
or pour some jam sauce or chocolate syrup, or can be eaten plain.
