INGREDIENTS
onion 1 finely chopped
tomatoes 2 small finely chopped
potato 3 medium size finely chopped
spinach 1 bunch washed, chopped and blanched
whole wheat flour 1 heaped tsp.
water as needed
salt and chili pdr. to taste
green chilies 3 finely chopped or as per taste
turmeric pdr. 1/4 tsp
coriander pdr. 1 tbsp
cumin pdr. 1 tsp
cumin 1 tsp
onion seeds/ kalonji 1/4 tsp
carom seeds/ ajwain 1/4 tsp
garlic 2 pearls finely chopped ( optional)
hing little
oil 1 tbsp
coriander leaves finely chopped 1 tbsp
METHOD
in a pan heat oil, add cumin, ajwain, onion seeds, fry till aroma comes, add green chilies, garlic,onion and wee bit of salt to fry till light brown, add tomatoes, fry till well cooked
add the spices, add potatoes, little water, cook and cover till potatoes are cooked
add the blanched spinach, mix well, add salt to taste, cook for 2 minutes, mix water with whole wheat flour, add to the boiling veges, mix well, add enough water to get desired consistency, simmer for 3-4 minutes adding half of the chopped coriander leaves, add screaming leaves to garnish, serve hot with roti/ rice/ toasted bread.
