INGREDIENTS
FOR CHUTNEY
Coriander leaves washed and chopped
1 cup
Ginger ½ “
Green chilies 3-4 / as per taste
Lime juice little
For rice
Cooked rice 2-3 cups or as needed
Salt to taste
Roasted peanuts / cashew nuts 2 tbsp
Coconut grated 2 tbsp
Coriander leaves 1 tbsp
METHOD
Grind together all the ingredients of chutney to a smooth paste.
Heat 1 tbsp oil, add ground green chutney, fry well for 3 minutes stirring
well
Add rice, salt, coconut, roasted nuts, mix well adding half of the
coriander leaves, keeping rest for garnishing. Serve hot with onion-tomato
raita and roasted papad.
