Crispy Ive gourd fry ( kundru/ kovakkai)

 Ingredients

Ivy gourd/ kundru/ kovakkai 500 gm washed and cut into rounds

onion 1 big finely chopped

salt to taste

red chili pdr to taste

turmeric pdr 1/2 tsp

for masala

coriander seeds  1 tbsp

chana dal 1 tbsp

urad dal 1 tbsp

peppercorns 1/2 tsp 

coconut grated 3-4 tbsp

For tempering

mustard seeds 1/2 tsp

jeera 1/2 tsp

saunf 1/2 tsp

hing little 

oil 2-3 tbsp

curry leaves 1 tbsp chopped

 

Preparations

dry roast the dals, coriander seeds, peppercorn, once dals are golden, add coconut fry for another 2-3 minutes

once cool, powder it along with red chili pdr to taste

in the kadai, add oil 2 tbsp, add mustard seeds, saunf and jeera , once they crackle add hind, curry leaves and onion

fry till onions are pink, add the cut kundru mix well  adding salt and turmeric, cover and cook till the veges are cooked

add the powdered masala, mix well, add some oil if needed to fry for another 2-3 minutes stirring well on medium flame.
