When you've small amounts of different gravies, dry veges left-over, change it into a delicious veg bath, at times, I would hardly get to eat it ! Yes, it is yummy, just don't tell the family made with left-overs.
Ingredients
all left-overs
onion 1 finely chopped
tomatoes 1-2 finely chopped
capsicum 1 finely chopped
carrot 1 finely chopped
garlic 1-2 cloves finely chopped ( optional)
curry leaves finely chopped 2 sprigs
green peas or corn if it is there at home
potato 1 finely chopped if desired
green chilies finely chopped to taste
oil 1 tbsp
ghee 1 tsp
mustard seeds 1/2 tsp
jeera 1/2 tsp
hing little
turmeric pdr little
salt to taste
garam masala pdr 1/2 tsp
kitchen king masala 1/2 tsp ( optional)
coriander leaves finely chopped 2 tbsp
cashews chopped 1-2 tbsp (optional)
Rice cooked as needed
Preparations
in a heavy big pan/ kadai add oil, once hot add mustard seeds, jeera, once it crackles add hing, garlic
curry leaves, green chilies fry adding cashews till light brown, remove some cashews for garnishing
add onion fry adding wee bit salt, once translucent add tomato, fry for 3-4 minutes till soft, add carrot, capsicum, potatoes, add enough salt to eat, remember there was salt in all the leftover dishes too !
cover and cook the vegetables adding turmeric pdr
once done add the garam masala and kitchen king along with half of the coriander leaves, cook for 2-3 minutes, add rice mix well adding ghee.
check for spices, if need be add some salt/ pepper pdr
Serve hot garnish with fried cashews, curry leaves and coriander laves along with cucumber raita and roasted papad.
This will make a complete meal as it has carbs, protein, minerals and vitamins.
