INGREDIENTS for dosa
raw rice 2 cups
udad dal 1 cup
wash & soak dal & rice together in enough water to cover it for about 4 hours with 1 tsp of methi seeds. grind it smooth with the water in which it is soaked with salt to taste. Keep the batter aside for about an hour at least, then make dosa as usual on a hot greased tava.
For masala or stuffing
potatoes 1/2 kg boiled , peeled & mashed
onion 2 big
green chillies 4-5
ginger 1 cm
garlic 4 flakes
curry leaves
fresh coriander leaves little
oil 1 tbsp
mustard seeds 1/2 tsp
chana dal 2 tsp
udad dal 2 tsp
hing little
turmeric pdr. 1/4 tsp
Heat oil, add mustard seeds, once it crackles, add the dals, as they turn light brown, add hing, finely chopped ginger, garlic, green chillies, curry leaves, sauté, then add finely chopped onion, fry till light brown.
add turmeric pdr, mashed potatoes, mix well adding salt to taste
add finely chopped coriander leaves, as you take off the gas.
those who like lime, may squeeze some lime juice to the potato mixture after you've taken it off the gas.
Once the dosas are made, put the masala in the centre, fold it, serve hot with coconut chutney & sambar.
