Ingredients
2 cups grated zucchini (about 2 medium), excess moisture squeezed out
1 cup breadcrumbs (plain or seasoned)
½ cup grated Parmesan cheese
2 large eggs
2 cloves garlic, minced
¼ cup finely chopped onion
2 tbsp chopped fresh coriander leaves
½ tsp salt
¼ tsp black pepper
½ tsp Italian seasoning (optional)
Cooking spray or olive oil (for baking)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
In a large bowl, combine grated zucchini, breadcrumbs, Parmesan, eggs, garlic, onion, parsley, salt, pepper, and Italian seasoning if using. Mix well until fully combined.
Form the mixture into small balls, about 1 to 1½ inches in size. Place them evenly spaced on the prepared baking sheet.
Bake for 20–25 minutes, turning once halfway through, until golden brown and slightly crisp on the outside.
Let cool slightly before serving. Serve warm with marinara sauce, ranch, or your favorite dip.
