INGREDIENTS
for stuffing
chana dal cooked, drained 1/2- 1 cup as needed
green chilies finely chopped to taste
ginger finely chopped 1 tbsp
salt to taste
hing little
coriander leaves finely chopped 2 tbsp
for covering
maida 1 cup OR maida and wheat flour half/ half
salt little
baking pdr 1 tsp
ghee 2 tbsp
ajwain little
curd 2 tbsp
water as needed to make soft dough, put 1 tsp oil on top, cover and keep for 15 minutes
oil for frying
METHOD
wash, soak and cook chana dal till soft, drain the excess water, which can be used in dal or in making roti and can drink it as soup adding salt and pepper
add the dal, along with green chilies, ginger and grind to a smooth paste without adding water
add salt, coriander leaves, mix well, make small balls and keep it aside
now take the dough, knead it again, then take bigger ball than the dal size, lightly roll like puri, put the dal ball in the center, cover well, roll it again, then grease the rolling board with oil, roll out the stuffed batura.
fry the batura in hot oil, till it puffs up, turns golden, drain well, keep on absorbent kitchen paper.
serve the stuffed batura hot with coriander/ mint chutney, mango pickle and curd.
