Makhana Kheer

 Ingredients

  • Makhana/ fox nuts – 50 gm
  • Ghee – 2 tbsp
  • Cashew nuts – 1 tbsp
  • Almond- 1 tbsp
  • Pista –1 tbsp ( optional)
  • Milk – 100 ml
  • Khoya – 25 gm  OR milk pdr
  • Cardamom powder – 1/2 tsp
  • Sugar – 30 gm or to taste

Method

Heat ghee, add nuts fry till golden, remove

add makhana to the same pan, fry till crisp

Add the milk to the fried makhana

Add sugar and khoya or milk powder mixed with little milk cook it till thick

Add cardamom powder and nuts, saving some nuts for garnishing.

It can be served hot or cold, as it cools, it will get thicker.


This kheer or pudding is made on festivals or any special occasion. Makhana / fox nuts or lotus stem is mainly used during Navaratri/ Dassera festivals, when many don't eat any grains- rice, wheat, eat water chestnut flour/ singhare ka atta as it is called.
