INGREDIENTS
2 tsp ghee (to roast nuts)
10-15 cashews
10-15 raisins
2 tsp ghee (to roast suji)
1 cup suji
1 tsp ghee (for pineapple syrup)
1 cup pineapple chunks
3 tbsp sugar (for pineapple syrup)
3 cups water
6-7 saffron strands
2-3 drops yellow food gel colour (optional)
¾ cup sugar (after the suji thickens)
1 tsp cardamom powder
¼ cup ghee (for cardamom powder)
INSTRUCTIONS
Set
a kadhai on low to medium heat and add ghee along with cashews and
raisins. Roast the nuts for 2-3 minutes till they are golden and
fragrant. Set aside.
In the same kadhai add ghee and suji, and roast the suji for about 5 minutes till it’s brown and toasted. Set it aside.
Add ghee, pineapple, sugar, water, and saffron in a kadhai. Cover it and let it simmer for 5-7 minutes.
Add in roasted suji and cook it for 2-3 minutes.
Once the halwa has thickened add sugar and stir continuously till the sugar completely melts.
Lastly add in melted ghee and cardamom powder. Mix everything well. Fold in the roasted dry fruits and serve.
