Pineapple Suji Halwa

 INGREDIENTS
2 tsp ghee (to roast nuts)
10-15 cashews
10-15 raisins
2 tsp ghee (to roast suji)
1 cup suji
1 tsp ghee (for pineapple syrup)
1 cup pineapple chunks
3 tbsp sugar (for pineapple syrup)
3 cups water
6-7 saffron strands
2-3 drops yellow food gel colour (optional)
¾ cup sugar (after the suji thickens)
1 tsp cardamom powder
¼ cup ghee (for cardamom powder)

 

INSTRUCTIONS
Set a kadhai on low to medium heat and add ghee along with cashews and raisins. Roast the nuts for 2-3 minutes till they are golden and fragrant. Set aside.

⁠In the same kadhai add ghee and suji, and roast the suji for about 5 minutes till it’s brown and toasted. Set it aside.

⁠Add ghee, pineapple, sugar, water, and saffron in a kadhai. Cover it and let it simmer for 5-7 minutes.

Add in roasted suji and cook it for 2-3 minutes.

⁠Once the halwa has thickened add sugar and stir continuously till the sugar completely melts.

⁠Lastly add in melted ghee and cardamom powder. Mix everything well. ⁠Fold in the roasted dry fruits and serve.
