Jackfruit seed with coconut gravy and Akki roti

This is protein rich recipe. as it has jackfruit seeds. When I used to buy jackfruit, with seeds I used to put in sambar, or make halwa with moong dal.

Ingredients

jackfruit seeds 10-12

coconut ground with green chilies and jeera  1 cup

shallots/ sambar onion  1/2 cup cut into halves

dry red chilies 2-3 break into halves

curry leaves 2 sprigs

water as needed

coconut oil  1 tbsp

turmeric pdr  1/2 tsp

black pepper pdr  1/2 tsp

sambar masala pdr 1 tsp

coconut milk 3-4 tbsp


Method

in a kadai / pan heat oil, add shallots with little salt so it can fry in less oil

once onion has turned pink, add red chilies, and some finely chopped curry leaves and few curry leaves whole, which you take out once they're crisp along with 1-2 dry red chili for garnishing

add dry masala powders, fry well, add little water

now add boiled jackfruit seeds, coconut paste,  mix well, add salt to taste and more water, mix, cover, simmer and let it cook for 15 minutes

add coconut milk , give it a good stir and remove

once well cooked, garnish with the dry red chili and fried curry leaves


For Akki roti

cabbage finely chopped 3 tbsp

onion finely chopped 1 small

carrot 1 finely grated

green chilies finely chopped to taste

rice flour  1/2 cup

salt to taste

hot water to knead

oil to make roti and on hands and banana leaves


Mix all the ingredients well, then add little hot water, mix well, add little more mix well

knead adding more water if needed to make a soft dough

now smear oil in your hands and smear on two banana leaves

take a big orange size ball, place it between 2 banana leaves, you flatten it by pressing it from top with your hands and palm

once thin like roti, make some slits around for it to cook well

with the banana leaf, slowly place it on the hot tawa and remove the leaf, now put little oil on the small holes you've made, let it cook on medium heat, once bottom turns  brown, flip it, put little more oil on the holes, press it down to cook till light brown and crisp

serve it hot with jackfruit seed gravy
