Ingredients
suji 1 cup
besan 1 tbsp
salt to taste
lime juice 2 tsp
Eno fruit salt 1 tsp
Watermelon 1/2 big, seeds removed, cut into chunks to make juice
oil to grease the plate
Tempering
oil 1 tbsp
mustard seeds 1 tsp
hing little
lime cut into pieces of 1 lime
mint leaves few torn with hand
green chilies 2 small chopped
Directions
In a big bowl, add suji, besan, salt mix well.
In a juicer, add watermelon pieces, blend to get the juice.
Add the watermelon juice little by little, whisking well.
Add Eno fruit salt, mix well, add more juice if needed to get the correct pouring consistency
Heat the steamer with some water
Grease the steamer plate well, pour the batter, level it, steam for roughly 15 minutes, when you poke in the center with a knife, it should come out clean. If yes, remove the steamer plate
Turn the dhokla on a serving plate, pour the prepared seasoning,
heating oil in a small pan, add mustard seeds, once it crackles, add hing, green chilies chopped, cut lime pieces, mint leaves few torn with your hands.
Cut the dhokla into small squares, pour the seasoning all over the top, you can add some grated coconut if desired.
