Pistachio Baklava Rolls

 Ingredients:

1 package phyllo dough, thawed
2 cups pistachios, finely chopped
1 cup granulated sugar
1 tsp  cinnamon  pdr
1/2 tsp cardamom  pdr
3/4 cup unsalted butter, melted
1 cup honey
1/2 cup water
1/4 cup lemon juice
1 tsp vanilla extract
 
 
Directions:
Preheat your oven to 350°F (175°C).
In a bowl, mix pistachios, 1/2 cup sugar, cinnamon, and cardamom.
Unroll phyllo dough and cover with a damp cloth to prevent drying out.
Brush one phyllo sheet with melted butter, sprinkle with pistachio mixture, and roll tightly. Slice the roll into pieces and place on a baking sheet.
Repeat with remaining phyllo sheets and pistachio mixture.
Bake for 20 minutes or until golden brown.
While baking, cook honey, water, 1/2 cup sugar, lemon juice, and vanilla in a saucepan over medium heat until slightly thickened.
Pour the syrup over the baked rolls while hot.
Allow to cool before serving.
