Start off with layering sliced bananas on the bottom of a two cake pans.
By adding this brown sugar mixture, a frosting-like layer is created that oozes in between the bananas and coconut while baking.
Next, sprinkle on some coconut and spread your cake batter on top.
Bake as usual, till the cake top is brown, when a knife inserted in the centre comes out clean.
To serve, cool, then turn the pan upside down on a plate, you can see the banana pieces on top like in the 1st picture.
