INGREDIENTS FOR BEETROOT HALWA
beetroot grated 1 cup
ghee 2 tbsp
nuts 1 tbsp chopped
cardamom pdr 1 tsp
sugar 1/2-3/4 cup
FOR SANDESH
cottage cheese/ paneer 1 cup
icing sugar 3-4 tbsp
chopped nuts 3 tbsp
METHOD
heat ghee, add beetroot, fry well, then add sugar, keep stirring it, till sugar melts, halwa
becomes a thick mass
then add cardamom pdr after taking it off, add nuts
let it cool
For Sandesh
mash paneer well, add icing sugar, mix well
on a flat surface or on a plate, spread chopped nuts, spread the cheese mixture on it evenly with your hands, at the same time, putting the nuts which come from the sides on top.
sprinkle some icing sugar on top, press lightly, cut into desired shapes.
TO -SERVE
on a plate, put the halwa pressed in a small katori, invert it. on it, put the cut sandesh, you may put a drop of saffron colour on top. serve it cold.
ps- you may do the same way with carrot halwa
tip- as cheese isn't cooked, make sure you keep it in the fridge or else it will get spoiled.
