A simple, quick dish to carry for lunch to school/ office/ picnic.
Ingredients
raw banana 1 big, wash, peel and grate it
salt to taste
turmeric pdr 1/4 tsp
sambar pdr OR red chili pdr 1/2 tsp or to taste
pepper pdr 1/4 tsp
oil 1 tbsp
ghee 1/2 tbsp
cashews 1 tbsp
curry leaves 2 sprigs washed and chopped
hing little
cooked rice as needed
coriander leaves chopped 1-2 tbsp
Preparations
in a bowl mix all the masalas, add the grated banana and mix well, cover and keep for 10-15 minutes.
In a pan/ kadai, heat oil, add cashews, once golden add curry leaves, hing, add the banana mixed with spices, sprinkle little water, cover and cook on medium flame, after 2-3 minutes, stir well, cover and cook again.
after another 2-3 minutes, mix well, if you think the bananas is well cooked, add it to the cooked rice along with coriander leaves & a tbsp of ghee, mix well. Serve it hot or carry it in a hot pack to work, enjoy with some cucumber raita and some fried vadams/ chips.
