Ingredients
for stuffing
fenugreek leaves/ methi leaves - 1 bowl
besan 1/4 cup
peanuts 1/4 cup roasted and roughly crushed
salt to taste
hing 1/4 tsp
turmeric pdr 1/2 tsp
red chili pdr 1/2- 1 tsp as per taste
dry mango pdr/ amchur 1 tsp
coriander pdr 1 tsp
roasted jeera pdr 1/2 tsp
coriander leaves finely chopped 3 tbsp reserve some for garnishing
Raw bananas 3-4
Oil 2 tbsp
water about 1/4 cup or less
mustard seeds 1/2 tsp
ajwain 1/2 tsp
hing little
salt to taste
turmeric pdr 1/4 tsp
Method
In a tsp of hot oil, add the methi leaves with little salt, as it will help it to sweat and the bitter taste of leaves will be less, remove and keep the fried leaves in a bowl to cool
in a pan, dry roast besan stirring continuously till the raw smell goes, add to the methi leaves once cool
coarsely crush the peanuts
now add rest of the ingredients for stuffing to the methi leaves along with besan and peanuts, mix well.
cut the top and the bottom part of the banana, cut into roughly 1" pieces with the skin , then cut in the center of each piece, taking care not to cut it fully
In each slit, stuff with enough stuffing
heat oil in a pan/ kadai, add hing, mustard seeds, carom, add the water, salt, turmeric pdr mix well, if any stuffing is left, add it to the pan
now place the stuffed banana pieces, mix well, cover and cook for 8-10 minutes in medium flame till done.
Once done, the water would have evaporated, garnish with remaining coriander leaves.
Serve it hot with roti/ puri/ batura.
