Preheat the oven to 200 C
Cut the cauliflower into bite-sized florets.
In a large bowl, toss the cauliflower florets with olive oil, minced garlic, garlic powder, smoked paprika, kosher salt, and black pepper until evenly coated.
Spread the coated cauliflower on a baking sheet in a single layer.
Roast the cauliflower in the oven for 25-30 minutes, tossing halfway through, until golden brown and tender.
Sprinkle grated Parmesan cheese over the cauliflower and return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
