Manakish: Lebanese Flatbread Pizza

Soft flatbread topped with olive oil and za’atar. Simple, aromatic, and deeply satisfying.

  

 Ingredients

  • All-purpose flour – 2 cups
  • Yeast – 1 tsp
  • Sugar – 1 tsp
  • Salt – 1 tsp
  • Olive oil – 2 tbsp
  • Warm water – ¾ cup

Topping:

  • Za’atar spice – 2 tbsp
  • Olive oil – 2 tbsp


Method

  1. Make the dough and rest for 1 hour.
  2. Roll into rounds. Mix za’atar with olive oil and spread evenly.
  3. Bake at 220°C for 8–10 minutes or cook covered on a tawa.

Tip: Manakish is best eaten fresh and warm, ideally with tea.
