Quick Aloo Paratha

Ingredients and Prep

Potatoes 2-3 big, peel and grate put it in water 

ginger finely chopped / grated 1 tsp

green chilies finely chopped 1 tsp or to taste

turmeric pdr 1/4 tsp

garam masala 1/2 tsp ( optional)

Kasturi methi 1 tsp

salt to taste

whole wheat flour 1 cup

suji fine 1 cup

water 2 cups

coriander leaves 1-2 tbsp finely chopped

ghee to cook

oil 1 tsp

jeera 1/2 tsp 

sesame  seeds 1 tsp

hing little

wash the grated potatoes well 2-3 times

squeeze the water well and keep aside

in a kadai/ pan heat oil, add jeera as it crackles, add hing, ginger, green chilies, fry for a minute

add water, turmeric pdr, garam masala pdr, kasturi methi crushed,add the squeezed potatoes, salt and mix well

once the water boils, lower the flame add flour and suji, mix well, seeing no lumps are formed.

cook covered for a minute, add coriander leaves, mix well, remove

once slightly cool, knead well

divide into small balls, dust with flour and roll rotis not too thin

heat a tawa, put the rolled paratha, cook well till light brown on both sides adding little ghee

cook all parathas in the same way, serve hot with some chutney, pickle and curd.
