Summers are a season when hunger pangs go for a toss, and eating heavy and greasy meals seems absolutely repulsive. We’re often on the lookout for some light meals that are delicious to eat and light on the stomach too. Here is a coconut water soup recipe that is simply perfect for those evenings when all you need is a light and tasty soup. It requires very simple ingredients and is easy to prepare too.
Ingredients:
Coconut Water with Pulp: 2 liters
Onions: 3 (cut into chunky pieces)
Potatoes: 4, medium (cut into chunky pieces)
Carrots: 2 (peeled and chopped)
Tomatoes: 2, medium size (chopped roughly)
Salt: to taste
Crushed peppercorns: 1 tsp or to taste
Water: 2 cups
Method:
Take a deep pot, add the coconut water dilute it with 2 cups of water and allow it to boil. Once boiled, lower the flame and add the onions, and potatoes with some salt and allow it to simmer for about 30 minutes or so. Add the tomatoes and carrots and let it cook for another 15-20 minutes.
Once the vegetables in the soup seem to fall apart, add some freshly crushed peppercorns. Transfer the contents into soup bowls and serve hot.
