Beetroot Halwa

pressure cooker beetroot halwa served in a black bowl garnished with pistachios 

Ingredients

chopped and ground beetroot 1 cup

suji/ rava 1 cup

sugar roughly 1 cup or to taste ( I love sweets, but shouldn't be over-sweet)

milk roughly 500 ml

water little I used to take out the beets stuck in the mixer jar

Nuts and raisins as you much as you want

I didn't use ghee, though wanted to put 1 tsp last, but forgot, you can add ghee as you like

cardamom pdr 1/2 tsp

 

Preparations

after grinding the beets, I put it in a micro safe dish along with suji, water, and about 250 l milk

mixed it all well, I kept it on micro high, every 2 minutes, I was taking it out, mixing it, once the milk was absorbed, I added the remaining milk and sugar, kept cooking every 2 minutes, stirring and putting it back on microwave till thick. 

Just before it got thick, I added chopped nuts, reserves to garnish on top.

Before the last 1 minute, I added the cardamom pdr, mixed well.

I left it in the microwave, it got thicker as it cooled down, adding ghee, would have enhanced its taste. Anyway, as I'm on weight reduction ( not giving up sweets ), I didn't, rather forgot to add ghee, as simultaneously I was making beet pickle on the gas.

I made the halwa in the microwave, I'm sure that  you can cook it on the gas, basically, I can't stand for long to do the work and staying in senior citizens' home, there's less space, hence I've a single gas top stove. Cooking both, I do the sweets in the microwave mostly.
