I really loved the peach melba the only time hubby treated me soon after the marriage in the Marina beach, Chennai.
Normally the Melba sauce is made with fresh raspberries. Sadly, it is not commonly grown in India, here is an alternative-
take a cup of water, and add to it 3 tsps of cornflour / arrowroot , 2 tbsp pf sugar and a few drops of cochineal and 1 tsp of Raspberry essence. Simmer for a while, remove from heat and chill. Serve with vanilla ice-cream with some peaches chopped in it along with sauce !
