INGREDIENTS
cauliflower 1 medium size
chili pdr 1 tsp
garlic paste 1/4 tsp
ginger paste 1/4 tsp
garam masala pdr 1/4 tsp
curd 2 tbsp
lime juice of 1/2 lime
oil 2 tbsp
salt to taste
peas 1/2 cup
cashew nuts 2 tbsp
raisins 1 tbsp
ghee 2 tbsp
coriander leaves for garnishing
FOR MASALA
coriander pdr 1 tbsp
turmeric pdr 1/2 tsp
saunf / aniseed pdr 1/2 tsp
ginger paste 1/2 tsp
tomato puree 1/2 cup
oil 125 mo / 1/2 cup
chili pdr 1 tsp
jeera / cumin seed pdr 1/2 tsp
onion 3 large
garlic paste 1/2 tsp
garam masala 1/2 tsp
salt to taste
METHOD
if the cauliflower is big, cut into florets and wash it.
mix the first 8 ingredients well.
apply this paste on the cauliflower and keep it aside for 30 minutes.
steam the cauliflower for 15 minutes.
cook the peas in little water with sea salt till 3/4th done.
grease an oven proof dish with ghee and put the cauliflower and peas ( reserving few peas for garnishing).
bake in hot oven for 15 minutes
slice 2 onions finely and chop 1 onion.
heat oil and fry sliced onion till golden brown and remove.
fry cashew nuts and raisins and remove.
add chopped onion and fry till soft.
add coriander, chili, turmeric, cumin and saunf powders.
fry till oil oozes out.
add tomato puree, salt and 1/2 cup of water
cook till oil separates
remove from fire
crush half of the fried onion and add to the gravy.
remove the cauliflower from the oven and pour the gravy on top.
sprinkle garam masala pdr.
put it back in the oven for 5 minutes
garnish with fried onion, cashew nuts, raisins and coriander leaves.
serve hot with roti / paranthas / fried rice.
