Pineapples are one of the healthiest tropical fruits. Its rich nutrient content and savoury flavour make it a healthy food that you can include in your diet. Pineapples are rich in vitamin C. This makes them immunity building fruits. Vitamin C also helps in the absorption of iron in the body from the diet and aids development and growth. It has anti-inflammatory properties and its richness in antioxidants makes it a contributor to healthy metabolism and digestive system. Furthermore, it can help to reduce the risks of the development of some cancers because it simulates the functioning of white blood cells.
- 2 beaten eggs
- Chinese five-spice powder (1/2 tsp)
- Soy sauce (2 tbsp)
- Sunflower oil (1 1/2 tbsp)
- 2 crushed garlic cloves
- Chopped spring onion (1 cup)
- Frozen peas (85 g)
- Pineapple chopped into chunks (400 g)
- Sesame oil (2 tsp)
- Cooked rice, long-grain (400 g)
Take a wok and heat 1 tbsp of oil in it. Add the eggs into the wok and make a thin omelette.
Bring the omelette to the chopping board and roll it. Chop the rolled omelette into ribbons.
Pour the remaining oil into the wok and add onions, five-spice and garlic into it. Stir-fry until it started to sizzle.
Add rice, sesame oil, sou and peas to the wok and cook on high heat. When the rice is hot, add omelette ribbons and pineapple into it and stir.
Serve.

You can also use vegetable oil instead of sunflower oil.
