Cauliflower Keema

 Ingredients

cauliflower medium size 2

peas 1 cup

onion 2

ginger 1" 

cardamom 6

cashew nuts 15 chopped

bay leaves 2

cumin/ jeera  1 tsp

coriander pdr  1 tsp

saffron little dissolved in 1 tbsp warm milk

ghee 1 tbsp

water 1 cup

salt to taste


Method

wash and grate cauliflower

grind onion, ginger and cardamom to a paste

soak tomatoes in boiling water, when soft, take out the juice, passing through a sieve.

heat oil in a pan, bay leaf,add jeera, once it crackles, add coriander pdr, onion paste, tomato juice and fry well till the paste stops sticking to the sides of the pan.

add water, grated cauliflower, peas and salt, mix well, cover and allow to simmer until the water gets absorbed, remove from fire, add saffron milk.

just before serving, remove the bay leaves, sprinkle cashew nuts over the kheema.
