Simply drop an eighth of a teaspoon of cold water into the pan as it heats up. You need to measure the water precisely with your measuring spoons as 1/4 of a tsp is too much. If nothing happens, the pan is too cold, if it bubbles and steams, the pan is too hot – when you see a perfect bubble forming, it’s just right.
