INGREDIENTS
peas 1 cup cooked in little water
paneer made out of 1/2 litre milk
tomatoes 250 gm
cheese 25 gm
onion 1 big
chili pdr 1 tsp
flour 1 tsp
sugar 1 tsp
apple 1 small
cooked rice 1 cup
green chilies 2 or to taste
garlic 10 cloves
butter 2 tbsp
tomato ketchup 2 tbsp
coriander leave 1/2 bunch
salt to taste
FOR GREEN SAUCE
butter 3 tbsp
milk 1 cup
coriander leaves 1/2 bunch\flour 3 tbsp
green chilies 2
peas 1/4 cup cooked in little water
salt to taste
METHOD
for green sauce
grind chilies, coriander ;eaves together to a smooth paste.
grind peas separately to a smooth paste
heat butter, add flour, and fry for a few seconds
add ground ingredients and fry for few more seconds.
add milk and salt, cook till the sauce becomes thick.
remove from fire and keep aside.
chop onion, green chilies, coriander leaves and garlic.
cut paneer into small cubes.
peel and dice apple.
blanch tomatoes and extract a thick tomato puree about 1 cup.
heat 1 tbsp butter and saute onion, chilies and half of the garlic.
when onion turns transparent remove from fire, add to the cooked rice and mix well.
add coriander leaves and keep aside.
add remaining garlic, chili pdr, sugar and salt to the tomato puree and cook till the sauce becomes thick.
add butter and flour mixed in little water and stir well.
add paneer pieces, apple and half of the peas and tomato ketchup, mix well and remove from fire.
grease transparent fire proof dish and spread rice evenly.
put the paneer masala on top of the rice and cover with green sauce.
sprinkle grated cheese and remaining peas.
bake in a hot oven till cheese melts, serve hot.
