INGREDIENTS
bread slices 8 big
rava 1cup
Break bread into bits powder it in the mixer jar , add rava to it along with
curd 2 tbsp
water as needed
salt to taste
Mix it all well, the mixture should not be too thick or thin, almost like idli batter, keep mixing well for 5 minutes, cover and let the mixture rest for 30 minutes
boil 3-4 big potatoes boiled, peeled and grated
add salt, green chilies finely chopped to taste
turmeric pdr 1/4 tsp
coriander leaves chopped 1 tbsp mix it well
those who love cheese, can add 2 tbsp of grated cheese/ paneer to it
For green batter
wash and roughly chop 1 cup spinach leaves
green chilies 1-2 broken into small pieces / chopped
coriander leaves 1-2 tbsp
salt to taste
OR if you don't have spinach, you can make the green paste with coriander leaves with mint too
grind it in a mixer jar adding very little water, be careful as too much water, your batter will be thin and you won't be able to proceed with the recipe
for red/ pink batter
boil 1 beetroot, slice it grind with salt and chili pdr with little water to a fine paste

To Assemble the rolls
if you have big stainless steel glasses, grease them well with oil all around and down too, if you don't have big glasses or have big katoris grease them well.
depending on the vessel you choose to steam, according to that you've to divide the potato mixture, either 3 long rolls, or if you're using tall glasses or smaller balls if you are using a katori or smaller glasses
Divide the bread- rava batter into 3 equal parts
keep one white, 2nd add green mixture, mix well so the colour gets mixed well
3rd add beet mixture to get pink batter
in a vessel or pressure cooker or idli steamer add water and keep on gas to heat
now in the white batter, add 1/4 tsp Eno fruit salt, wee bit water, lightly mix the batter, depending on how many glasses you're going to use if 6, then each colour 2 glasses,according to that, divide the batter, put 1 -2 tbsp in the glass keep the potato roll in the center, cover with 2 tbsp of batter, make sure not to fill till the top, as the batter will rise up due to Eno.
Repeat the process with green batter adding Eno, pouring in glass in same way adding potato then covering it
Repeat the process with the pink batter
now carefully keep the glasses or the katoris in the steamer/ cooker, cover and steam in medium flame for 10-12 minutes
To check if you insert a tooth pick in the center it should come out clean. Remove, cool for a minute
with a knife, to remove move it all around and tap it, then cut them into rounds, when you can see the center yellow, in white, green or pink rounds.
Serve hot with chutney of your choice.
NOTE- you may add hing, little ajwain and other masala if preferred to the potato mixture.
Eno fruit salt should be added just before you pour the batter to steam.
