Ingredients
For chhanar kofta
Home-made paneer/ chana 200 gm
Maida ½ tbsp
Kashmiri red chili pdr ½ tsp
Baking pdr 1/4 tsp
Nutmeg pdr a pinch
Salt to taste
Ghee 1 tbsp
Oil for frying
For chanar kalia
1 tomato pureed
Whipped yogurt 1/3 cup
Cashew paste 4 tbsp
Ginger paste 1 tsp
Cumin ½ tsp
Green cardamom 2
Bay leaves 2
Cloves 2
Cinnamon 1”
Hing ¼ tsp
Turmeric pdr 1 tsp
Kashmir red chili pdr 1 tsp
Garam masala pdr ¼ tsp
Mustard oil 2 tbsp
Ghee 1 tbsp
Sugar 1 tsp
Salt to taste
Instructions
For chanar kofta
Take the chana/ paneer in a bowl, crumble it using your fingers. Add the flour, ghee ½ tsp, Kashmir red chili pdr, baking pdr, mace-nutmeg pdr to the paneer.
knead well till the dough comes out of the bowl smooth and your palm looks oily. About 8-10 minutes of exercise for your hands, I think so.
Grease a dish with little ghee, spread the above mixture on the dish, about 6-7 mm of thickness. Allow it to set for a while. Cut into square shape.
Heat oil, add remaining ghee on a pan, fry the chana/ paneer koftas till golden. Keep aside on the kitchen absorbent towel.
For chanar kalia
Add 2 tbsp oil and 1 tbsp ghee in a pan. When smoking hot, throw in the bay leaves, cumin seeds, hing, crushed cardamom, cinnamon, cloves and allow the spices to splutter.
When the spices start to release their aromas, stir in the tomato puree, sprinkle a little slat and saute till the tomatoes are cooked.
Now add the whipped yogurt, ginger paste, turmeric pdr, Kashmir red chili pdr, cool for 5-7 minutes till oil starts to release from the masala.
Stir in the cashew paste, sprinkle sugar, cook for another 3-4 minutes. Add ¾ cups of water, give it a good stir, simmer for roughly 5 minutes.
Adjust the seasonings, gently place the fried chana koftas in the curry, cook for a further 2-3 minutes over a very low flame.
Finish with ghee, sprinkle garam masala pdr. Switch off the gas, allow it to stand for 5-7 minutes, serve hot.
